I decided to make the two batches for my grandma in disposable dishes that are also easy to cook the casserole in too, plus warm up the casserole later since they would be eating them the following day. The batch I made for my family was gone within the same day! My dad came over and enjoyed some too. If you do decide to freeze it simply warm it up in the oven on 350* once you are ready to serve it. This recipe is perfect to batch cook and freeze as well.

This casserole is simple to make and even better you can double or triple the recipe! I decided to triple the recipe, then I also made one batch with a gluten free cream of chicken and cereal so that I could enjoy it too. My first stop on this cooking adventure was Walmart to pick up the Ore-Ida Shredded Hash Brown Potatoes, then it was time to cook. SheвЂ™s always asking me to make her different things that she misses from years ago, so this year I thought I would make a few batches of Cheesy Potato Casserole for her to share with her friends at the retirement home. She does have a small kitchen but it just isnвЂ™t setup really for her to cook. One thing she doesnвЂ™t get to do much of anymore is cook. Sometimes I think she has a more busy life than I do! I call her and she is never in her apartment, sheвЂ™s either at bingo or watching a movie, always on the go! SheвЂ™s one of the queens of the retirement home and involved in all sorts of activities. IвЂ™ve shared many of her recipes here on this blog however, as she has gotten older she now lives in a retirement home. She always had a heart for making sure everyone was fed and even more importantly fed really good food. I remember spending hours with her in the kitchen making candies, soups, casseroles, and treats that we would load up and take to family and friends. Her food was amazing, and she loved to cook. My grandma is the one in our family that cooked.
